- 1 bunch of chopped frozen spinach (lb)
- 1 chopped onion
- 1/2 cup pine nuts
- Juice from 2 lemons
- 3 Tbls olive oil
- 1/2 tbls salt
- 1/4 tbls all spice
- 1/2 cup of dry (or fresh) basil
1. heat oil over medium heat
2. add pine nuts and brown. Remove pine nuts
3. in the same oil, add onion and turn until light brown (about five minutes)
4. add spinach to onions and oil. Turn once in a while until spinach is
very tender (changes color slightly)
5. add salt, all spice, pine nuts, and lemon juice, and basil. Turn for
2-3 minutes.
6. Serve hot or cold
