If you like Tabouli, you'll love Fatoush!

Serves 6-8

  • 3 8-inch pitas
  • 2 medium tomatoes
  • 1 cucumber
  • 1 green pepper
  • 1 bunch of radishes
  • 1 medium onion
  • 2 bunches of parsley
  • 1/2 bunch of fresh mint
  • 1 bunch of sweet basil

Dressing

  • 2/3 cup olive oil
  • 2 lemons, squeezed
  • 3 cloves garlic, minced
  • 1 T salt
  • 1 t all spice
  • 1/2 cup sumac (available at the Middle Eastern store!)

1. Chop parsley medium fine. Take the leaves off of the stems of the mint and basil. Chop tomatoes into small cubes (ca. 3/4 " in diameter).

2. Peel cucumber and cut length-wise into half-circles.

3. Remove leaves and stems from radishes and chop into slices.

4. Chop green pepper into 1/2"wedges.

5. Chop onion into wedges, then into thin, long slices.

6. Separate pita into two round halves and toast in the oven until crispy.

7. Keep pita aside until right before serving. Combine ingredients of dressing and let marinate for about 1 hour.

8. In a large bowl, mix veggies, dressing
and toasted pita.

A fresh fatoush is served with crispy pita bread, so combine ingredients shortly before eating!
